Is software development the only “engineering” profession that advocates for not understanding the medium they build with? Would we accept a civil eng saying they didn’t need to know the properties of concrete? Or a mech eng who said they didn’t need to know how engines work?

If you understand your whole codebase, the codebase isn't that important. Real software is larger than what your brain can comprehend.
