Here's another quote by Maimonides, from one of his most famous works, The Guide for the Perplexed, published in 1190: "The Turks [i.e., the Mongol race] who wander in the North, and the Blacks and the nomads in the South, and those who resemble them in our climates, they are to be judged as mute animals are judged, and I consider them not on the level of human beings, and their level among existing things is below that of a man and above that of a monkey, because they have the image, the resemblance, and the consciousness of a man more than a monkey does."

61. Lt Col Boaz Cohen, a senior commander from the 16th Infantry Brigade quoting: “You shall blot out the memory of Amalek” Maimonides, Laws of Kings and Their Wars: "...There is also a positive commandment to obliterate the memory of Amalek, as it is said, 'You shall blot out the memory of Amalek.' And there is a positive commandment to always remember his evil deeds and his ambush, in order to arouse hatred towards him, as it is said, 'Remember what Amalek did to you.' From tradition, it was learned that 'remember' means verbally, and 'do not forget' means in your heart, for it is forbidden to forget his enmity and hatred."
